honey ricotta toast w/ macerated berries

I am obsessed with ricotta, so naturally I’m always looking for new ways to enjoy it. Most ricotta recipes lean towards the savory side, or the killer ricotta pancakes that you order at brunch ;) but this recipe is super simple and so satisfying! It also makes such an interesting and delicious brunch bar. You can lay out different types of toasts, have the whipped ricotta ready to scoop and macerated berries & other fruits, like grilled pineapple or fresh sliced figs. Give this one a shot, hope you all enjoy!

INGREDIENTS

  • 2 cups fresh berries

  • 1/4 cup sugar

  • 3/4 cup fresh ricotta cheese

  • 1 tablespoon honey

  • 1/4 teaspoon lemon zest

  • your favorite bread // i opted for a whole grain loaf from whole foods called seeduction ha!

  • pistachios // chopped

DIRECTIONS

  1. Place the berries in a bowl. Add the sugar and mix. Let the mixture sit for 30 minutes or more. Stir every 10 minutes.

  2. Toast your bread.

  3. Add the ricotta, lemon zest and honey to a bowl and use a whisk to whip everything together to a smooth and creamy consistency. You can also use a stand mixer.

  4. Time to assemble! Start with the toast, slather on the ricotta mixture then add the berries and top off with the pistachios. Enjoy!
