lemon poppy seed muffins

one of my all time favorite muffins.

Who doesn’t love a good muffin to enjoy with a cup of joe or a tea latte? I know I certainly do, I’m sure you all do too! My favorites are lemon poppy, corn and blueberry. I would love to hear what some of your favorites are. Share down below and maybe I’ll bake your favorite next? ;)

INGREDIENTS

FOR THE MUFFINS

  • 2/3 cup sugar

  • grated zest and juice of 1 lemon

  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1/4 teaspoon baking soda

  • 3/4 plain greek yogurt / i used Siggi’s icelandic style yogurt, my favorite!

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup salted butter / melted and cooled

  • 2 tablespoons poppy seeds

FOR THE GLAZE

  • confectioners’ sugar

  • fresh lemon juice

DIRECTIONS

  1. Preheat the oven to 400°F. Line your muffin pan with paper or parchment liners. I used parchment paper squares.

  2. In a large bowl, rub the sugar and the lemon zest together with your fingertips until the sugar is moist and the fragrance of the lemon is strong. Whisk in the flour, baking powder and baking soda. In a small bowl, whisk the yogurt, eggs, vanilla, lemon juice and melted butter together until thoroughly combined.

  3. Pour the liquid ingredients over the dry ingredients and gently stir to blend. Don't overmix. Stir in the poppy seeds. Divide the batter evenly among the muffin cups.

  4. Bake for 18 to 20 minutes, or until the tops are golden and a toothpick inserted into the center of the muffins comes out clean. Transfer the pan to a cooling rack and cool for 5 minutes before carefully removing the muffins from the pan. Cool the muffins completely.

  5. In a small bowl, add the powdered sugar and lemon juice. Use your judgement on “measurements”, I never measure ingredients for icings. Just add enough of each until you have the right consistency for you :) If you’d like to dip the muffin tops, then you’ll want a thinner consistency, if you’d like to drizzle like I did, then you’re looking for a slightly thicker consistency. Have fun with the icing, and enjoy your muffins!
