fluffy pancakes
Honey comes from bees, but pancakes come from heaven.
I’ve been flipping pancakes since the humble age of nine years old, when I was finally allowed to use the stove. By no means were they anything like the fluffy stack of pancakes pictured above, in fact I burned through record batches of pancake mix. It took me quite some time to get it just right. The first step being, to get away from my trusty go to: Aunt Jemima’s. No shame in using box mix, there’s lots of great ones out there, but nothing compared to this recipe. It’s also really easy to make with simple ingredients that you probably have on hand. While some recipes call for buttermilk, and buttermilk is great, I myself don’t have it in my fridge often enough. So in comes the hero of this recipe: the “soured” milk and it works wonderfully!
This recipe is a winner! I’ve made it for friends and family and everyone can agree, they’re the best! My personal favorite aside from these bad boys are the pancakes from Jimmy’s Diner in Brooklyn. So if you ever find yourself in the best city on the planet, swing on by, you’re in for a real treat!
INGREDIENTS
3/4 cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons butter, melted
butter or cooking spray
DIRECTIONS
Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
Heat a large skillet over medium heat, and coat with butter or cooking spray. Pour batter onto the skillet, and cook until bubbles appear. Flip and cook until browned on the other side.
Top with butter, maple syrup, honey, fresh berries or anything your heart desires! Enjoy!
