french apple cake
Perfectly light and delectable!
This recipe was passed around through my mom’s friends circle and eventually made its way to me. When I first made this cake I was astounded. It seemed like such a simple, humble cake and it is. But man oh man is it delicious! It was such a hit in our home, that a week after I first baked this cake, there were demands for a second one! Both of which were devoured at record speed. But don’t take my word for it, get to baking folks! Hope you all enjoy this one as much as we do.
INGREDIENTS
3/4 cup + 1 tbsp all purpose flour
3/4 tsp baking powder
1/8 tsp salt / or use salted butter
3 large apples / peeled, cored and diced into 1 inch pieces
2 large eggs
3/4 cup sugar
2 tbsp dark rum
1 tsp vanilla
1 stick butter (1/2 cup) / melted and cooled
DIRECTIONS
Preheat the oven to 350°F. Butter and line an 8 or 9 inch round cake pan with parchment paper.
Sift and whisk the flour, baking powder and salt together in a bowl.
Whisk the eggs in another bowl until foamy, then add the sugar. Whisk until smooth and combined. Add the vanilla and rum. Mix well.
Alternately add the flour and butter in two batches. Mix well and gently after each addition to ensure a smooth batter.
Fold in the apples with a spatula. Pour the batter into the pan and spread evenly with a spatula.
Bake for 50-60 minutes or until the top of the cake is golden brown and a toothpick inserted in the center comes out clean. Transfer to a cooling rack and cool for 15 minutes before removing from the pan. Enjoy!
