mediterranean potato salad w/ salmon
It is easy to halve the potato where there is love.
The ingredients in this potato salad were what drew me to try it. I absolutely loveeee dill and coriander but I don’t have enough recipes that use them. Sumac also lured me in. This was the first time that I used it and it is incredible! The flavors in this dish come together so well. Many thanks to Suzy from The Mediterranean Dish for this recipe. I slightly adjusted some of the ingredients and directions. Hope you all enjoy this one just as much as I did!
INGREDIENTS FOR POTATO SALAD
1 1/2 lb baby potatoes / unpeeled (i used a mix of red, gold and purple potatoes)
water
2 tsp salt
1/4 cup chopped red onions
1/4 cup fresh chopped parsley
1/4 cup chopped dill
2 tbsp capers
DIJON VINAIGRETTE FOR POTATO SALAD
1/3 cup extra virgin olive oil
2 tbsp white wine vinegar
2 tsp Dijon mustard
1/2 tsp ground sumac
1/2 tsp black pepper
1/4 tsp ground coriander
DIRECTIONS FOR POTATO SALAD
Wash and dry potatoes. Slice potatoes thinly.
Place potatoes in a pot and add water to cover by 1 inch. Bring to a boil. Add salt and turn to simmer until potatoes are tender about 6 minutes or so.
In the meantime, add vinaigrette ingredients to a small bowl and whisk until well combined.
When potatoes are ready, remove from heat and drain. Place potatoes in a large bowl and add the vinaigrette, toss to coat.
Add onions, fresh herbs, and capers. Toss gently to combine. Enjoy!
This salmon recipe is my go to! Its so damn good and it pairs well with just about anything!
INGREDIENTS FOR SALMON
salmon fillets
lemons
worcestershire sauce
olive oil
salt and pepper to tase
DIRECTIONS FOR SALMON
Zest your lemons. Add the zest to a bowl.
Add equal parts lemon juice and worcestershire sauce to the bowl. Add a drizzle of olive oil.
Mix to combine the marinade.
Place the salmon fillets in a dish deep enough to hold the marinade.
Marinade the salmon for as long as you’d like. The longer it sits, the better the flavor.
Set your oven to broil.
Place your marinaded salmon fillets on a broiler safe sheet, tray or pan (i used a stainless steel pan). Be sure to add high heat safe oil to whatever vessel you choose (i used corn).
Broil for about 8 minutes or to desired doneness.
