roasted sweet potato farro bowl
Sweet potatoes and farro were meant to be best friends!
This my friends is such a comforting bowl! Its vegan but by no means is it a light dish, its so hearty and every single ingredient comes together for the perfect bite! Roasted sweet potato, chewy farro, buttery avocado, garlicky chickpeas and my favorite lemon vinaigrette. I came across this recipe on The Curious Chickpea, I slightly adjusted the ingredients and some of the directions as well. I hope you all give this one a try, enjoy!
INGREDIENTS
LEMON VINAIGRETTE
3 tbsp lemon juice
1 tbsp apple cider vinegar
1 tsp dijon mustard
2 cloves garlic / crushed
1 tsp dried oregano
1/4 tsp salt
1/2 tsp maple syrup
3/4 cup olive oil
EVERYTHING ELSE
olive oil
2 large sweet potatoes / washed and cut into 1/2" thick slices
salt and pepper to taste
1 cup farro
vegetable broth
1 can chickpeas / drained and rinsed
2 cloves garlic / minced
1/4 tsp salt
avocado
sliced scallion
DIRECTIONS
Make the dressing. Combine the lemon juice, vinegar, dijon mustard, garlic, oregano, salt, and maple syrup. Blend using an immersion blender, if you have one. I used a regular blender to slowly pour in the olive oil until it's creamy and emulsified. They key is to pour it in a slow drizzle. Set the dressing in the fridge to chill while you prepare the rest of your bowl.
Preheat the oven to 425 ºF and line a baking tray with parchment. Arrange the sweet potato in a single layer. Brush the tops and bottoms of the sweet potato slices with some olive oil and season with salt and pepper to taste. Bake for 10 minutes, flip the slices, then bake for another 10 minutes.
Meanwhile, cook the farro according to the package. I always use vegetable broth instead of water for more flavor.
Heat some olive oil in a large skillet over medium heat. Add the chickpeas and let them cook for 4-5 minutes, stirring occasionally, until they are lightly golden in spots. Add the minced garlic, and salt to taste. Cook for an additional 1-2 minutes, stirring constantly so the garlic doesn't burn. Turn off the heat. Taste and add more salt if desired.
When all parts of the bowl are done, assemble! Enjoy!
