heirloom tomatoes w/ polenta rounds
to-MAY-to, toma-TOE, however you say it, they’re damn delicious!
As a kid, i was oddly obsessed with two things: corn and TOMATOES. In whatever way I could get them I was a happy camper, whether it was picking them out of a salad or from the counter as my mom started to make la cena (dinner), I couldn’t get enough of them! And not much has changed in that regard. So of course whenever summer comes around and these chunky, weird looking fellas start popping up at the farmer’s market. I know exactly what to make right away, this fresh salad! It’s extremely simple (I know I say this a lot guys haha but I mean it). This recipe is more of an ode to these tomatoes than it is a traditional recipe. So head on over to your local farmer’s market, grab the weirdest looking ones in the bunch and hit the kitchen!
INGREDIENTS
heirloom tomatoes
flaky sea salt
fresh lemon
fresh basil
your favorite olive oil
polenta / in stick form
DIRECTIONS
I feel a little silly adding any directions, but here goes!
Slice up your tomatoes.
Sprinkle with flaky sea salt.
Squeeze fresh lemon juice and olive oil on top.
Chop up some basil and add it to your tomatoes.
Slice the polenta into 1/2 inch rounds.
Heat a skillet with some olive oil.
Add the polenta rounds. And cook for about 2 mins on each side, until they’re crisp.
Serve alongside your tomatoes and enjoy!
