avocado toast & smoked salmon
Happiness is slicing into an avocado thats picture perfect.
This is definitely the recipe I make most often! Being an island girl at heart, I can’t help but love avocado. It’s so easy to make, its filling and it pairs perfectly with a cafe con leche (post coming soon!).
Avo-advice: If you’ve got too many avocados on hand that are ripe, and you don’t plan on using them right away store them in the fridge, until you’re ready for em. The cold stops the ripening process and preserves your perfect avocado. I’ve been doing this for years! Shoutouts to mom for the invaluable words of avo-wisdom!
INGREDIENTS
two slices of your favorite bread
one ripe avocado
fresh lemon
red pepper flakes
salt
smoked salmon (i use scottish smoked from trader joe’s)
optional toppings: pickled red onion (will be posting my recipe soon), hemp seeds, olive oil, eggs and honestly whatever else sounds good to you, avocado toast is a great canvas!
DIRECTIONS
Toast your bread. (i prefer a crunchier piece of toast for avocado, it creates a better overall texture, in my humble opinion)
Slice your avocado in half. Peel the skin off. Remove the pit.
Slice or mash the avocado halves on your toast.
Sprinkle red pepper flakes and salt to taste. Squeeze some lemon on top.
Flake off some smoked salmon and add to your toast.
Continue to add your favorite toppings, and enjoy!
