peanut chicken zoodles
super easy, yummy and filling!
This veggie packed recipe is perfect for a quick meal! You can slice up all the veggies yourself or do what I did and buy pre cut veggies, it cuts the prep time in half to a recipe that is already super quick to whip up! The flavor is unreal. You (like myself) will become addicted to this yummy peanut sauce! I’ve had zoodles before but this is by farrrrrrr my favorite recipe for them! Hope you all give this one a try!
INGREDIENTS FOR ZOODLES
2 tablespoons sesame oil
2 teaspoons garlic / minced
1 cup shredded carrots
1 cup thinly sliced cabbage
1 red bell pepper / thinly sliced
3 large zucchini / spiralized into noodles or 1 pack of zucchini noodles
2 large chicken breasts / cooked & shredded
optional additional toppings: cilantro, peanuts, sesame seeds and scallions
INGREDIENTS FOR PEANUT SAUCE
1/2 cup creamy peanut butter
1/3 cup honey
1/3 cup soy sauce
2 tablespoons sesame oil
2 tablespoons rice vinegar
2 teaspoons fresh ginger / minced
sriracha to taste
INGREDIENTS FOR CHICKEN BREASTS
2 chicken breasts
1 celery stalk / sliced into thirds
1/2 small white onion
2 garlic cloves / smashed
salt and pepper to taste
DIRECTIONS
Fill a medium pot with water, add celery, onion, garlic, salt & pepper and chicken breasts to the water. Bring to a boil. Cook thoroughly. (my two chicken breasts took about 12 minutes to cook)
Combine all of the peanut sauce ingredients in a small saucepan over low heat. Whisk constantly until the peanut butter has melted and everything is combined.
Heat 2 tablespoons of sesame oil and the garlic in a large skillet over medium heat. Add the carrots, cabbage, and pepper slices. Cook for about 5 minutes until the vegetables are a little tender. Once tender, add the zucchini noodles and shredded chicken to the skillet. Cook and stir for about 3 minutes until the zucchini is a little softer and chicken is warm. Turn off the stove and remove from heat. Set aside.
Once the sauce is heated through, pour over chicken/vegetables. Toss everything around until combined. Place on a serving dish (or not!) and top with sesame seeds, cilantro, peanuts, and green onion. Serve and enjoy!
